   Great topic for discussion.  I'm in the a very similar situation of rebuilding a dozen or so VMs but on the exact opposite side of the fence (I'm primarily a dev).  Since I'm going through this process for the umpteenth time I'm actually documenting my steps this time around and will be writing some blog posts over the next month on it.  You are very correct that if you're an admin and not used to the dev software sometimes you don't know which options to install, tricks for reducing install time, etc.  On the flip side I'm sure as a dev I have no clue about some of the great tips and tricks you have up your sleeve.  Perhaps we should compare some notes.  Enjoy your trip.
